Our family has worked hard to perfect our Traditional Sunday Pizza.  Pizza night has become an important part of our week, and it is a pleasure to work together in the kitchen to create a special meal; a relaxing, comforting way to end the weekend.

Crust for two 12-inch Pizzas
3 1/2 tsp Dry bread machine yeast
1.4 cup Warm water
3 1/2 cups All-purpose flour
2 3/4 Tbsp Vegetable Oil
1.4 tsp Sugar
1.4 tsp Salt

Pizza Sauce
1 can (15 oz.) Tomato sauce
3-4 cloves Fresh minced garlic
1-2 tsp Italian Seasoning

Two 12-inch Pizzas
Two 12-inch pizza crusts, from above
Pizza sauce from above
1 can Black olives
2 handfuls Pepperoni
2 cups Shredded Mozzarella cheese
1/4 cup Diced red onion
1/4 cup Diced red pepper
10 thin slices Red onion
10 thin slices Red Pepper

Crust for two 12-inch Pizzas
Put in either the Yo-Yo Ma Cello Suites or the Tangerine Dream Seven Letters from Tibet CD.  Warm the oven by turning it on for 1 minute, then turning it off.

Dissolve yeast in warm water in large mixing bowl.  Stir in remaining ingredients until well mixed.  Coat dough ball with 1 Tbsp vegetable oil, cover, and place the mixing bowl in the warmed oven to rise.  Let rise until doubled, the longer the better.  Have a glass of wine while you chop vegetables and let the dough rise.

Remove the risen dough from the oven.  Preheat oven to 425 Deg-F.  Grease two round 12-inch pizza pans.  Divide the dough in half and press each half into the greased pans with greased fingers.  Bake crusts at 425 Deg-F for approximately eight minutes.  Remove and continue to prepare as described below.

Pizza Sauce
Mix 3-4 cloves of fresh minced garlic with 1-15oz can of tomato sauce and 1-2 tsp Italian seasoning.

Two 12-inch Pizza
Spread a quarter of the sauce mixture on each pizza and save the remaining sauce for dipping crusts, later.

Spread 1/2 can of large sliced black olives, keeping half the can for snacking while you wait for the pizzas to bake.  Spread diced red pepper and red onion over the pizza sauce.  Spread one cup mozzarella cheese on each pizza.  Top with pepperoni slices and thinly sliced red pepper and red onion.

Bake until cheese in light brown, about 12-14 minutes.  Let cool for several minutes before slicing. Enjoy!

That looks so yummy – thanks for the dinner idea for tonight! I use a little cornmeal too, just put it in the pan before putting in the dough.
